Make the frosting: In a large bowl, beat butter until smooth, then mix in powdered sugar and coconut extract. Add milk and mix until smooth. Fill a large piping bag with the frosting.

Assembly

Place a small dab of frosting on your cake stand and place the first large Bundt cake upside down on it. Pipe frosting around the top edge of the Bundt cake and fill with raspberry jam, avoiding the center.

Place the second large Bundt cake on top, right side up, so the cakes form a round shape. Pipe a small amount of frosting on top of the second large Bundt cake, then place one of the 6-inch Bundt cakes on top, upside down. Repeat steps 2 and 3 with the smaller Bundt cakes.

  4. Pour the batter into a greased 9.5 inch Bundt tin. 
  5. Bake on the center rack for 60 minutes (cake will be golden brown and a toothpick should come out clean. 
  6. Repeat steps 2-6 for the second half of the bottom layer of your cake.
  7. Repeat steps 2-4 then pour the batter into 2 6-inch Bundt tins. Bake for 30 minutes (cake should be golden brown and a toothpick should come out clean 
  8. Allow cakes to fully cool (I recommend overnight in the fridge)

Frosting 

  1. In a large bowl, beat butter until smooth then mix in powdered sugar and coconut extract. 
  2. Add in the milk and mix until smooth. 
  3. Fill a large piping bag with the frosting. 

Assembly 

  1. On your cake stand, place a small dab of frosting then place your first large Bundt cake upside down on the cake stand. 
  2. Pipe around the perimeter of the top of the bundt cake then fill with raspberry jam (avoiding the center of the bundt cake) 
  3. Place the second large bundt cake on top of the bottom bundt cake (right side up; your cakes should make a round shape when placed together). 
  4. Pipe a small amount of frosting on top of the second large bundt cake then place one of the 6-inch bundt cakes on top (upside down). Repeat step 2 and 3 but with the smaller bundt cakes. 
  5. Once your cakes are stacked, pipe frosting around the entirety of the cake and smooth it with an offset spatula. Your cakes should look like a snowman. 
  6. Press the shredded coconut to the frosting all around your cake. 
  7. Roll your black fondant out with a rolling pin and cut out a 4 inch circle and a six inch rectangle. Fashion these to create a top hat then palace on top of the snowman’s head.
  8. Cut out two small circles for eyes and multiple “circles” for a coal smile and buttons. Palace these on the cake and add the carrot for the nose. 
  9. Wrap the candy tape around the neck of the snowman and tie into a bow. Wrap a small strand around the top hat. 
  10. Serve and enjoy!
